Chocolate Butterscotch Fudge




I remember when I was in elementary school, every year on Valentine's Day each kid would set out some sort of Valentine holder: a paper mailbox, a weaved heart, or even something as simple as a decorated shoe box. Even though passing out your goodies was fun it was amazing and exciting digging through to see the different cards and candy. And for some of us, maybe a little something special from a special someone. 

Valentine’s Day really is the celebration in between the chilly snowy, rainy winters and the breezy fresh air of spring. We can still cozy up in the comforts of home but also draw open the curtains from our windows and let the slowly emerging sunlight in.

As we grow up and get older, everyone celebrates the day Cupid comes around with his arrows a little bit differently. Some don't celebrate at all; others get together with their friends and family just to be together, some have actual Valentine's Day parties, and others with someone close to the heart. Whether you're curled up on the couch nice and cozy wrapped in a blanket, hot cocoa in hand and a classic VDay movie playing; or getting ready for an exciting night, most everyone will love munching on these bars of chocolate.   

I’ve taken a Chocoloate Butterscotch Fudge recipe and put a little Valentine’s Day twist on it. The recipe I usually use to make my ChocoButter fudge is usually something like this one http://www.foodnetwork.com/recipes/paula-deen/dummy-fudge-recipe.html where you melt the butterscotch and chocolate together in a pot before refrigerating. However, I decided to try something a little different and have the butterscotch lie on top of the chocolate.

Ingredients:

~1 cup of Butterscotch chips
~1 can (14 oz.) of sweetened condensed milk
~2 cups of semi sweetened chocolate chips 
~1 teaspoon of vanilla extract
~1/2 cup of walnuts-or any kind of nuts (OPTIONAL)


Optional Ingredients:

~some sort of Valentine's themed candy (I just used some pink sprinkles)
~heart shaped cookie cutter


Directions:


  1. Line 8- or 9-inch square pan with waxed paper.
  2. In small-sized heavy saucepan, combine butterscotch chips and 1/3 cup sweetened condensed milk and melt together; set aside. (Should be smooth and look like peanut butter).
  3. In medium-sized heavy saucepan, over low heat, melt chocolate chips with remaining sweetened condensed milk.
  4. Remove from heat; stir in nuts (optional) and vanilla. Spread evenly into prepared pan.
  5. Spread butterscotch mixture evenly over the chocolate. *If the butterscotch has hardened a bit heat it up on the stove on low until smooth.
  6. Stick in the refrigerator for about 1 hour. Take cookie cutter and cut into shapes. Lay on wax paper and continue refrigerating. OPTIONAL: If you wanted to add candy on top this would also be the time in order to let the candy set in the fudge. I added sprinkles on the top.
  7. Chill 2 more hours or until firm. Peel off wax paper and store covered in refrigerator.
  8. Eat your "hearts" out!
